What is Gluten?
Gluten is a protein found in wheat, barley, rye, and any foods that are made with these grains. Gluten is responsible for the elastic texture of dough. Unfortunately, some people are sensitive to this protein and cannot digest it properly. Eliminating foods from one's diet that contain gluten provides relief for people with a gluten intolerance. A gluten intolerance and sensitivity is not to be confused with celiac disease.
What is Celiac Disease?
Celiac disease is an autoimmune disorder where the consumption and ingestion of gluten damages the small intestine. When gluten enters the body, it induces an immune response and attacks the small intestine, which leads to improper absorption of nutrients in the body. Left untreated, celiac disease can develop into serious health problems, such as diabetes, MS, anemia, and intestinal cancers.
